  1. Remove the bones and skins from the anchovy fillets.

  2. Pound the anchovies with an equal weight of fresh butter in a mortar.

  3. Spread the mixture on hot or cold toast or rusks.

  4. For sandwiches, cut thin slices of buttered bread.

  5. Add thin slices of ham, tongue, or beef, and spread with mustard.

  6. Sprinkle with pepper and coarse sea salt if the meat is unsalted.

  7. Cut the sandwiches into narrow slips.
