What each ingredient does

Lamb
Forms the main body of the dish, cooking slowly to tender, juicy meat.
Lean bacon
Larding adds fat that bastes the lean lamb as it roasts.
Bread crumbs
Form a crust that crisps and browns in the oven, sealing in moisture.
Vinegar
Adds acidity that brightens the rich, fatty flavour of the lamb.

The step that matters

Returning to a bright fire to brown. The breadcrumb crust needs high, direct heat to brown quickly. Too little heat dries the crumbs without colour, while too much can scorch them before the meat is cooked through.

Swap the parsley

How well each one fits the dish's main ingredients (lamb, bread, vinegar):

  1. Garlicfits better
  2. Pepperfits about as well
