Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Soak the tapioca in water overnight.
Boil the milk in a saucepan.
Pour off the soaking water from the tapioca and stir it into the boiling milk.
Make the custard
Cook for about 20 minutes.
Add the beaten egg yolks, sugar, and salt, and boil for 2 more minutes.
Stir in the vanilla.
Top and bake
In a separate bowl, beat the egg whites with 2 tablespoons of sugar until stiff.
Fold the beaten egg whites into the tapioca mixture.
Transfer to a dish and brown in the oven at 350°F (175°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pearl tapioca
- Thickens the milk as its starches swell and soften during cooking.
- Milk
- Forms the liquid base that the tapioca cooks into a creamy texture.
- Egg yolks
- Enrich and thicken the pudding, adding richness and body.
- Egg whites
- Whipped into a foam that lightens the pudding and helps it brown on top.
- Sugar
- Adds sweetness and helps the whipped egg whites hold their stiff structure.
The step that matters
Folding in the beaten egg whites. Whites deflate if overmixed or stirred vigorously, losing the airy lift that lightens the pudding. Fold gently, just until combined, so the foam stays intact through baking.
