Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Add the chopped chicken and seasoning to boiling cream sauce and cook for 2 minutes.

  2. Remove from heat and stir in the beaten egg yolks; let it cool.

Bake and serve

  1. When ready to serve, fold in the stiffly beaten egg whites.

  2. Pour the mixture into a baking dish and bake at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the base, while whipped whites lighten it and help it rise in the oven.
Cream sauce
Provides the moist, rich base that holds the chicken and sets around the egg structure.
Cooked chicken
Supplies the main protein and savory flavor that the soufflé is built around.

The step that matters

Fold in the stiffly beaten egg whites. Whites must be whipped stiff but folded gently so air bubbles are kept. Those bubbles expand in the oven and give the soufflé its lift; overmixing deflates them.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, cream, sauce, pepper, egg):

  1. Tarragonfits better
  2. Nutmegfits about as well
  3. Garlicfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, cream, sauce, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
