What each ingredient does

Oysters
Provide the main body of the cocktail, served raw in their liquor.
Lemon juice
Adds acidity that brightens the flavor and begins to firm the oyster flesh.
Tomato sauce
Adds sweetness, body and color to the seasoned liquid.

The step that matters

Letting the mixture stand on ice. The oysters are not cooked, so the acid in the lemon juice and sauce is what changes their texture and flavor. Keeping everything cold on ice slows spoilage and keeps the oysters fresh while they marinate.

Swap the tomato

How well each one fits the dish's main ingredients (oyster, pepper, lemon, sauce, watercress):

  1. Horseradishfits better
  2. Shallotfits better
  3. Spinachfits better
  4. Tomatothe original

Fit is the average pairing score against oyster, pepper, lemon, sauce, watercress. Candidates are from the same food group and used in at least 100 recipes.
