What each ingredient does

Large cucumbers
Form the pickle itself, becoming firm and crisp through the long brining and soaking.
Brine
Salts the cucumbers, drawing out water and firming the flesh during the nine-day soak.
Alum
Hardens the cucumber tissue so it stays crisp after scalding.
Vinegar
Adds acidity that preserves the pickle and gives it its sharp, tangy flavour.
Sugar (in the method)
Balances the sharpness of the vinegar with sweetness.
Raisins
Add sweetness and chewy texture inside the stuffed cucumbers.

The step that matters

Scalding the cucumbers in the vinegar mixture. Scalding must be brief and gentle. Overheating softens the cucumber flesh and can make it mushy, while the alum helps it stay firm. Lifting them out to cool promptly stops further cooking.

Swap the raisin

How well each one fits the dish's main ingredients (cucumber, grape, vinegar, lemon):

  1. Cherryfits better
  2. Limefits better
  3. Melonfits better
  4. Raisinthe original
