Riling for Caramel Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Grease and flour two 9-inch round cake pans.

  3. In a large bowl, cream the butter and sugar until light and fluffy.

  4. Add the eggs one at a time, mixing well after each addition.

  5. Stir in the vanilla extract.

  6. In another bowl, combine the flour and baking powder.

  7. Gradually add the dry ingredients to the creamed mixture, alternating with the milk.

  8. Pour the batter evenly into the prepared pans.

Bake and finish

  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  2. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

  3. Once cooled, spread caramel sauce between the layers and on top of the cake.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
Sugar
Creaming with butter builds a light structure and adds sweetness and browning.
Eggs
Add structure and richness, and help bind the batter as it sets in the oven.
All-purpose flour
Forms the main structure of the cake as the proteins set during baking.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Milk
Adds moisture and loosens the batter so it bakes into a soft crumb.

The step that matters

Adding the dry ingredients with the milk. Alternating small additions of flour and milk keeps the batter smooth and emulsified. Adding everything at once or overmixing can develop too much gluten, making the cake tough and dense.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, butter, milk, egg, sauce):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against flour, sugar, butter, milk, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
