What each ingredient does

Eggs
Whipped whites add a light, foamy texture to the punch.
Powdered sugar
Dissolves into the juice to provide sweetness that balances the citrus acidity.
Lemons
Their juice supplies the sharp acidity that defines the punch.

The step that matters

Adding the egg white froth gradually. Pouring the froth in all at once can deflate it and leave it unevenly distributed, so adding it slowly keeps the foam light and spread through the liquid.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, rum, wine, egg):

  1. Vanillafits about as well
