Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Mexican Rice and Tomatoes
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Chop the green peppers, celery, parsley, and onions together until fine.
Add the prepared tomatoes and sliced okra, and chop until very fine.
Wash the rice and place it in a large casserole.
Add the chopped vegetables, butter, sugar, salt, black pepper, paprika, and beef stock; stir thoroughly.
Place in a 350°F (175°C) oven and bake for 2 hours.
Slowly add the cream, making holes with a fork for absorption.
Bake for an additional hour and serve.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
