Directions

Make the base

  1. Soak the gelatin in cold water and let it dissolve on low heat.

  2. Boil the sugar and water to make a syrup, adding a small piece of lemon rind while boiling.

  3. Remove from heat and let it cool; then add the dissolved gelatin and the juice of the lemons.

Freeze and finish

  1. Freeze the mixture for a few minutes, then stir in the rum and brandy.

  2. Freeze again until ready to serve.

  3. Pour 1 tablespoon of Jamaica Rum over each glass of punch before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the sharp acidity and fresh citrus aroma that define the punch.
Gelatin
Gives the frozen mixture body and a smoother, less icy texture.
Sugar
Adds sweetness and balances the sourness of the lemon juice.
Rum and brandy
Add aroma and flavor, and their alcohol keeps the punch softer when frozen.

The step that matters

Adding the rum and brandy after a short freeze. Alcohol lowers the freezing point, so adding it too early can stop the mixture from setting to a slush. Freezing briefly first lets the base firm up, and the spirits then keep the final texture scoopable.
