Strawberry Short Cake

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Make a puff paste and roll it out thickly.

  2. Cut the dough in half, square the edges, and shape into two pieces about 10 inches long and 6 inches wide.

  3. Place the pieces on a large pan and bake in a 400°F (200°C) oven until thoroughly cooked.

  4. Let the crusts cool until slightly warm; they should rise about an inch.

  5. Beat the cream until very stiff, sweeten with powdered sugar and a little vanilla.

  6. Arrange strawberries upright on both crusts and sprinkle thickly with powdered sugar.

  7. Cover with the sweetened cream and place the second crust on top of the first.

  8. Let it sit in a cool place (not in the refrigerator) for a few minutes before serving.
