Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a bowl, combine the chopped dates, chopped walnuts, powdered sugar, flour, and baking powder. Mix well with your hands.

  2. Add the eggs without beating and stir the mixture well.

  3. Pour the batter into a greased baking pan.

Bake

  1. Bake for 40 minutes in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dates
Provide bulk, natural sweetness and a moist, chewy texture.
English walnuts
Add crunch and structure that holds the cake together.
Powdered sugar
Adds sweetness and fine texture to the batter.
Flour
Gives the batter structure so it sets as it bakes.
Eggs
Bind the mixture and help it set during baking.

The step that matters

Adding the eggs without beating. Beating eggs into this thick, fruit-and-nut batter can incorporate too much air or overwork the flour, changing the dense texture. Stirring gently just to combine keeps the cake tender and dense.

Swap the walnut

How well each one fits the dish's main ingredients (dates, sugar, flour, egg):

  1. Almondfits better
  2. Chestnutfits better
  3. Mixed nutsfits about as well
  4. Walnutthe original

Fit is the average pairing score against dates, sugar, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
