Stewbd Venison

Ingredients

Directions

  1. Cut rib pieces of venison into serving portions.

  2. Parboil in soda-water for a few minutes.

  3. Transfer to a kettle and cover with boiling water.

  4. Cook slowly, covered, adding coarse sea salt to taste when nearly done.

  5. Once tender, remove meat to a hot skillet and brown each piece in butter or bacon fat.

  6. Place the browned meat on a hot platter.

  7. Pour off most of the fat from the skillet, then thicken the remaining fat with flour.

  8. Add liquid from the stewing kettle to create a smooth gravy.

  9. Serve the gravy over the meat or separately in a hot gravy boat.
