Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Pork Chops with Dressing

Ingredients

Directions

  1. Moisten the bread well and season with coarse sea salt, black pepper, and powdered sage.

  2. Add the butter and the whole egg to the bread mixture and mix well.

  3. Rinse the pork chops and wipe them dry, then place them in a roasting pan.

  4. Pile the dressing on each chop, filling the pan with milk to the top of the chop without wetting the dressing.

  5. Cover the pan and bake for one hour.
