Veal Loaf with Eggs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make and layer the loaf

  1. In a large bowl, combine veal, salt pork, sage, pepper, salt, bread crumbs, beaten eggs, and milk. Mix well until all ingredients are combined.

  2. Grease a loaf pan and pour half of the mixture into it.

  3. Place the hard‑boiled eggs in the center of the mixture. Cover the eggs with the remaining meat mixture.

Bake and serve

  1. Bake for about 1 hour or until cooked through. Let cool before slicing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a meaty, sliceable texture.
Salt pork
Adds fat and moisture so the lean veal stays tender during baking.
Eggs
Bind the mixture and set when baked, holding the loaf together for slicing.
Bread crumbs
Absorb liquid and help the loaf hold together with a softer texture.
Milk
Adds moisture and softness to the meat mixture as it bakes.
Hard-boiled eggs
Form a firm, visible centre that sets the look of each slice.

The step that matters

Layering the hard-boiled eggs in the centre. Eggs must be fully enclosed in the meat mixture so the loaf bakes evenly around them. Gaps or uneven layers can leave cold spots or cause the slices to crumble when cut.

Flavor stand-ins for the sage

How well each one fits the dish's main ingredients (veal, pork, pepper, bread, egg, milk):

  1. Nutmegabout as good a flavor fit
  2. Sagethe original
  3. Marjoramabout as good a flavor fit
  4. Parsleyabout as good a flavor fit

Fit is the average pairing score against veal, pork, pepper, bread, egg, milk. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
