Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a soft, sliceable structure as it cools.
Sugar
Adds sweetness and balances the tartness of the orange juice.
Orange juice
Provides the main flavour and acidity of the dessert.
Sweetened whipped cream
Adds lightness, richness and a creamy texture when folded in.

The step that matters

Beating the mixture as it thickens. Beat only when the mixture is as thick as honey. If it is too thin, the cream will not hold air, and if it has already set firm, it will not blend smoothly with the whipped cream.

Swap the orange

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Orangethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
