Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the eggs slightly in a bowl.

  3. Add the sugar and salt to the eggs and mix well.

  4. Slowly pour in the scalding hot milk while stirring.

Bake

  1. Pour the mixture into buttered molds.

  2. Place the molds in a pan of hot water.

  3. Sprinkle nutmeg on top.

  4. Bake until just firm, then remove from the water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard into a firm, sliceable structure as they cook.
Milk
Provides the liquid base that gives the custard its soft, creamy texture.
Sugar
Adds sweetness and helps keep the custard tender.

The step that matters

Bake until just firm, then remove from the water. Eggs set as they heat, so overbaking turns the custard grainy, watery, or rubbery. Removing the molds from the hot water once just firm stops the cooking gently.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
