What each ingredient does

Potatoes
Break down during boiling and pressing to give the soup body and a thick, smooth texture.
Milk
Adds creaminess and mild sweetness, rounding out the broth.
Cornstarch
Thickens the liquid when boiled, giving the soup a fuller body.
Salt pork
Renders fat and savory flavor into the broth as the vegetables cook.
Onions
Build a sweet, savory base of flavor as they soften in the liquid.

The step that matters

Boil after adding the cornstarch and milk. Cornstarch only thickens fully when it reaches a boil, so the soup must be brought back to a boil and kept there for the full 3 minutes. Boiling milk too hard can scorch it on the pot bottom, so stir often.

Swap the turnip

How well each one fits the dish's main ingredients (pork, onion, potato, celery, milk, butter, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits better
  4. Turnipthe original

Fit is the average pairing score against pork, onion, potato, celery, milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
