What each ingredient does

Chestnuts
Form the main body of the dish, becoming soft and tender as they simmer.
Soup stock
Provides moisture and savoury flavour as the chestnuts simmer.
Brown sugar
Adds sweetness and helps the chestnuts take on a richer, caramel-like flavour.
Butter
Adds fat and richness to the simmering mixture and to the separately heated butter.
