Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sweetness and caramel flavor and, as it cooks, the body of the filling.
Butter
Adds richness and a smooth, glossy texture to the caramel.
Cream
Adds moisture and fat, giving the caramel a softer, creamier set.

The step that matters

Boiling until it hardens when dropped in water. Sugar sets firmer the further it cooks, since more water evaporates and the sugar concentration rises. Stopping too early leaves a runny filling; cooking too long makes it brittle or grainy. Testing a drop in water shows when it has reached the right stage.
