To Preserve Red Gooseberries
Ingredients
Directions
Prepare the fruit
Clip off the tops of the gooseberries, leaving the stalks.
Make a small slit in the side of each berry with a needle.
Make the syrup
Clarify the sugar and prepare a syrup.
When the syrup is ready, add the berries and boil until transparent.
Remove the berries with a skimmer and place them in pots.
Strain the syrup to remove seeds, then boil it again.
Set and pour
Cool a little syrup in a saucer; if it forms a stiff jelly, pour it over the berries.

What each ingredient does
- Red gooseberries
- Provide the fruit that holds its shape and becomes translucent when cooked in syrup.
- Refined sugar
- Sweetens the fruit and, when boiled into syrup, preserves it and helps it set.
The step that matters
Testing the syrup for a stiff jelly. Sugar syrup must reach the right concentration to gel as it cools. Too little boiling leaves it runny, while overcooking can make it hard or crystallised. The saucer test checks whether it will set around the berries.
