Oyster Rarebit

Ingredients

Directions

Prepare the oysters

  1. Clean and remove the gills from the oysters.

  2. Parboil the oysters in a chafing dish in their own liquor until the edges curl.

  3. Transfer the oysters to a hot bowl.

Make the rarebit

  1. In the chafing dish, melt the butter and add the cheese, salt, mustard, and cayenne pepper.

  2. Beat the eggs slightly. Mix the beaten eggs into the oyster liquor.

  3. Gradually combine the egg mixture with the melted cheese.

  4. Add the oysters to the mixture.

  5. Serve the mixture over hot toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the sauce and thicken it into a creamy, spoonable mixture as they cook.
Cheese
Melts into the sauce to give it body, richness and savory flavor.
Butter
Melts to enrich the sauce and carry the cheese smoothly.
Oysters
Provide the main briny, savory flavor and tender texture.

The step that matters

Gradually combine the egg mixture with the melted cheese. Adding the egg mixture too quickly can scramble the eggs against the hot cheese. Adding it slowly while stirring tempers the eggs so the sauce stays smooth and creamy.

Swap the mustard
