What each ingredient does

French chestnuts
Provide the main bulk and starchy, soft body of the stuffing when mashed.
Butter
Adds richness and fat, giving the stuffing a smoother mouthfeel and savory flavor.
Cream
Adds moisture and richness, helping the mashed chestnuts become soft and spreadable.
Cracker crumbs
Add dry structure and absorb the buttery liquid, giving the stuffing body and texture.

The step that matters

Mashing the chestnuts while still hot. Chestnuts are starchy and turn gummy or lumpy if overworked or left to cool. Pushing them through a ricer while they are soft and warm gives a smooth, even texture before the cream and butter are added.
