Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the eggplant

  1. Boil the eggplant in salted water for 15 minutes.

  2. Cut a slice from the top and remove the pulp with a spoon, being careful not to damage the skin.

  3. Chop the pulp and mix it with the bread crumbs.

Make the filling

  1. Melt the butter in a pan, add the onion, and cook for 5 minutes, or use bacon fat instead.

  2. Combine the onion mixture with the chopped pulp and bread, season with salt and pepper, and moisten with stock or water if needed.

  3. Cook the mixture for 5 minutes, then cool slightly and stir in the beaten egg.

Bake and serve

  1. Refill the eggplant with the mixture, cover with buttered bread crumbs, and bake at 400°F (200°C) for 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the edible shell and soft pulp that makes up the body of the dish.
Bread crumbs
Absorb moisture and give the filling body so it holds its shape.
Butter or bacon fat
Adds richness and carries flavor into the onion and filling.
Beaten egg
Binds the filling so it sets lightly when baked.

The step that matters

Cook the mixture for 5 minutes, then cool slightly before adding the egg. Cooling the filling slightly keeps the hot mixture from scrambling the beaten egg, so the egg blends in smoothly and binds the filling as it bakes.
