What each ingredient does

Sweetbreads
Provide the main body and tender, delicate texture of the croquette filling.
Butter
Enriches the base and adds richness to the flour-thickened sauce.
Flour
Thickens the butter and cream into a binding base that holds the filling together.
Cream
Adds moisture and richness, forming a smooth sauce that keeps the filling soft.
Egg yolk
Adds richness and helps bind the filling so it holds its shape.
Mushrooms
Add moisture and earthy flavour to the filling.

The step that matters

Let the mixture cool. A warm, loose filling will not hold its shape when shaped and can split or spread in the hot lard. Cooling lets the flour-thickened cream set so the croquettes keep their form and fry evenly.

Swap the onion

How well each one fits the dish's main ingredients (mushroom, butter, flour, cream, pepper, parsley, celery):

  1. Carrotfits better
  2. Shallotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against mushroom, butter, flour, cream, pepper, parsley, celery. Candidates are from the same food group and used in at least 100 recipes.
