Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Directions

Prepare the sweetbreads

  1. Boil sweetbreads in salted water with lemon juice; drain and cover with cold water.

What each ingredient does

Sweetbreads
Provide the main meaty filling that gives the cutlets their body and savory flavor.
Mushrooms
Add moisture and earthy flavor to the chopped filling.
Cream
Thickens with the flour into a rich binding sauce that holds the filling together.
Flour
Thickens the butter and cream into a stable, binding base for the filling.
Beaten egg
Binds the filling and, diluted, helps bread crumbs adhere to the cutlets.
Bread crumbs
Form a crisp, golden coating when fried.

The step that matters

Cooling the filling before shaping. The cream and flour mixture must set firm as it cools; shaping it while warm makes the cutlets soft and likely to fall apart when coated and fried.
