Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the butter and liquids into a smooth, stable sauce.
Butter
Forms the fat base that the flour cooks into a roux.
White stock
Provides the liquid that gives the sauce its body and flavour.
Cream
Adds richness and smoothness to the finished sauce.

The step that matters

Adding the stock and cream to the roux. Adding liquid gradually while stirring continuously keeps the starch granules dispersed, so the sauce becomes smooth instead of lumpy.
