Meat Cure

Ingredients

Directions

Prepare the meat

  1. Cut the meat into strips, removing all fat and gristle.

  2. Mince the meat at least twice.

Make the mixture

  1. In a saucepan, beat the minced meat with cold water or skimmed beef tea until it reaches a creamy consistency.

  2. Use 1 teaspoon of liquid for every 8 teaspoons of meat pulp.

  3. Add black pepper and coarse sea salt to taste.

Cook and serve

  1. Cook over low heat, stirring constantly, until hot and the red color disappears (about 1.5 hours).

  2. Serve hot, adding a softly poached egg white for the first few meals.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Steak
Provides the protein base that sets into a firm, savoury mass as it cooks.
Cold water or skimmed beef tea
Adds moisture so the minced meat becomes a creamy, spoonable consistency.

The step that matters

Cook over low heat, stirring constantly. Low heat with constant stirring heats the mixture evenly and prevents the meat proteins from scorching or seizing into lumps on the base of the pan.
