What each ingredient does

Milk
Provides the protein that curdles into solids, leaving the clear whey behind.
Sherry
Its acidity curdles the milk proteins, separating curd from whey.

The step that matters

Skimming off the curd as it rises. Curd that is left in the pan will sink or mix back into the liquid, cloudying the whey. Removing it as it floats keeps the whey clear.
