What each ingredient does

Concord grapes
Provide the juice, colour and most of the grape flavour.
Sugar
Adds sweetness and balances the grapes' natural tartness.

The step that matters

Heating the grapes slowly while stirring. Grape pulp and sugars scorch easily on the bottom of the pan. Constant stirring and gentle heat keep the mixture from burning, which would give the juice a bitter, burnt taste.
