Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Corned Beef Hash

Ingredients

Directions

  1. Remove skin and gristle from the cooked corned beef and chop the meat.

  2. If the meat is very fatty, discard most of the fat.

  3. Add an equal quantity of cold mashed potatoes to the meat.

  4. Season with salt and pepper, then moisten with milk or cream and mix thoroughly.

  5. Spread the mixture evenly in a greased frying pan.

  6. Place the pan on the stove where it can brown slowly.

  7. Fold the hash and turn it onto a hot platter.

  8. Garnish with parsley.

  9. Optionally, shape the mixture into cakes and sauté in hot fat.
