Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

  1. Roll puff paste into a long sheet ¼ inch thick.

  2. Cut into strips 1 inch wide and 16 inches long.

  3. Roll the strips around forms, overlapping the edges, and chill.

  4. Bake in a hot oven (400°F / 200°C) until well puffed and slightly browned.

  5. Remove from the oven and brush with slightly beaten egg white mixed with cold water.

  6. Sprinkle with fruit sugar and return to the oven to brown.

  7. Once cooled, remove the paste from the forms and fill with sweetened and flavored whipped cream.
