Stuffed Pepper

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pepper

  1. Cut the top from the pepper and remove the seeds and membrane.

  2. Slice a thin piece from the bottom so it can stand upright.

Make the filling

  1. In a saucepan, make a white sauce by melting 3 tablespoons of butter, adding 4 tablespoons of flour, and gradually whisking in ½ cup of milk and 1 teaspoon of salt.

  2. Add onion juice and the chopped meat to the sauce and mix well.

Bake and serve

  1. Fill the pepper with the meat mixture and top with 1 tablespoon of buttered crumbs.

  2. Place the pepper in a baking pan and add boiling water to the bottom.

  3. Bake at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the butter and milk into a white sauce that holds the filling together.
Butter
Enriches the white sauce and adds richness to the filling.
Milk
Liquid that turns the flour and butter roux into a smooth white sauce.
Cooked veal or chicken
Main filling that gives the dish its body and protein.

The step that matters

Whisking the milk into the roux. Adding the milk gradually while whisking keeps the flour and butter mixture smooth, so the sauce does not form lumps.
