Strawberry Shortcake

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the shortcake

  1. Mix flour, fat, baking powder, milk, and salt as for Tea Biscuit.

  2. Toss the dough on a floured board and roll to 4‑inch thickness.

  3. Shape into two rounds using a cookie cutter.

  4. Place the rounds in a greased biscuit pan and bake for 15 minutes at 400°F (200°C).

Prepare the strawberries

  1. Wash and hull the strawberries, saving the largest ones.

  2. Mash the remaining strawberries, sweeten with fruit sugar, and let stand for a short time.

Assemble and serve

  1. When the cake comes out of the oven, place it on a serving dish and remove the upper half.

  2. Spread the strawberries over the lower half, replace the upper half, and cover with mashed berries or whole berries dusted with fruit sugar.

  3. Serve with whipped cream.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the shortcake as its main starch and protein base.
Fat
Tenderizes the crumb and creates flaky layers as it stays solid during mixing.
Baking powder
Releases gas in the oven so the shortcake rises and becomes light.
Milk
Moistens the dough so the flour hydrates and the biscuit holds together.
Strawberries
Provide fresh fruit flavor, moisture, and acidity that balance the sweet shortcake.

The step that matters

Rolling the dough to an even 4‑inch thickness before cutting. Uneven dough bakes unevenly, leaving some rounds dense or dry. Handling the dough gently and avoiding overworking keeps the gluten tender, so the shortcake stays light and crumbly.
