Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the mixture so it holds its shape when chilled.
Chocolate
Provides the main flavour and rich body of the mousse-like filling.
Whipped cream
Adds air and lightness, giving the filling a soft, creamy texture.
Fruit sugar
Sweetens the filling and balances the bitterness of the chocolate.

The step that matters

Fold in the whipped cream gently. Whipped cream holds air bubbles that give the filling its lightness. Vigorous stirring deflates them, leaving a dense result, so fold slowly with a spatula until just combined.
