    Shared aroma: beta-damascenone (apple, rose).

Orange and sugar barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

What each ingredient does

Sugar
Sweetens the peel and, as syrup, is absorbed to make it candied and preserved.
Orange peel
Provides the main flavour and aromatic oil, with the bitter pith removed.

The step that matters

Cook the strips until tender before candying. Boiling in water softens the peel and draws out some bitterness. Skipping or shortening this step leaves the rind tough and bitter, and the syrup cannot penetrate it properly.
