Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped with powdered sugar to form a stiff meringue that spreads over the top and browns in the oven.
Lady fingers
Soft sponge layer that sits on the apple sauce and absorbs some of its moisture.
Apple sauce
Moist, sweet base that fills the dish and gives the dessert its main flavor.

The step that matters

Brown slightly in the oven. Meringue made with egg white and sugar can over-brown quickly or weep if overbaked. A light browning sets the surface and firms it, so watching closely matters.

Swap the apple

How well each one fits the dish's main ingredients (sauce, nutmeg, egg, sugar, cream):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against sauce, nutmeg, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
