Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thick sweet cream
Whipped to form the light, airy body of the dessert.
Egg whites
Whipped to stiff peaks to lighten the filling and help it hold its shape.
Gelatine
Sets the cream mixture so it stiffens and holds its shape when turned out.
Sugar
Sweetens the whipped cream and balances the richness of the filling.

The step that matters

Folding in the egg whites. Stirring instead of folding deflates the whipped egg whites and cream, losing the air that gives the dessert its lightness. Fold gently so the foam survives.
