Why it works: Almond and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 15,679 recipes. Both carry 1-penten-3-one, which smells fish, pungent. The science ↓
Macaroons
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Make the batter
Work together almond paste and powdered sugar on a smooth surface.
Gradually add egg whites and mix until the mixture is perfectly smooth.
Shape and bake
Shape the mixture using a pastry bag and tube on a baking sheet lined with buttered paper, spacing them ½ inch apart. Alternatively, drop small piles from the tip of a spoon.
Bake in a slow oven at 300°F (150°C) for 15 to 20 minutes. For softer macaroons, bake them slightly less.
Finish
After baking, invert the paper and wet it with a cloth soaked in cold water to easily remove the macaroons.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Almond paste
- Provides the nutty flavour and the chewy, moist body of the macaroons.
- Egg whites
- Give structure and lightness to the mixture, helping it hold its shape while baking.
- Powdered sugar
- Sweetens the batter and helps give the macaroons a smooth, fine texture.
The step that matters
Baking time. Baking slightly less gives softer macaroons, while baking longer dries and firms them. Small differences in time change the final texture noticeably.
Swap the almond
How well each one fits the dish's main ingredients (egg, sugar):
- Pecansfits about as well
- Almondthe original
- Chestnutfits about as well
- Milletfits less well
Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
