What each ingredient does

Gelatine
Sets the liquid mixture into a firm, sliceable cream as it cools.
Sweet cream
Whipped, it adds air and a light, creamy texture to the set dessert.
Chocolate
Adds chocolate flavour and richness, and firms the mixture slightly as it cools.
White sugar
Sweetens the dessert and balances the bitterness of the chocolate.

The step that matters

Adding the chocolate and cream as the gelatine thickens. Gelatine must be thickening but not yet set; if it is too hot, the whipped cream deflates and loses its air, and if it has already set, the ingredients will not blend evenly. Timing this step keeps the dessert light and smooth.
