What each ingredient does

Liver
Provides the body and savory flavor that thickens the sauce when pounded smooth.
Melted butter
Adds fat and richness, giving the sauce a smooth, silky mouthfeel.
Parsley leaves
Contributes a fresh, green, herbal aroma and flavor to the sauce.

The step that matters

Warm the mixture gently without boiling. High heat can cause the butter to separate and the liver proteins to tighten and curdle, leaving the sauce grainy instead of smooth.
