What each ingredient does

Butter
Carries the flavour and gives the sauce richness while cooking the vegetables.
Flour
Thickens the sauce as its starch swells in the hot milk.
Milk
Forms the liquid body of the sauce that the flour thickens.
Egg yolks
Thicken and enrich the sauce when gently heated.
Onions
Add sweetness and aroma as they cook slowly in the butter.

The step that matters

Adding the milk gradually. Pouring the milk in slowly while shaking the pan keeps the flour dispersed, so its starch swells evenly. Flour added all at once clumps, and lumps cannot be fully smoothed out once the sauce has thickened.

Swap the onion

How well each one fits the dish's main ingredients (butter, carrot, mushroom, flour, milk, pepper, egg):

  1. Capsicumfits better
  2. Potatofits better
