Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Collared Beef
Ingredients
Directions
Cure
Hang the beef in a damp place for 1–2 days to soften the outer skin.
Rub the beef with coarse salt and let it sit for 2 days.
Mix saltpetre, black pepper, coarse sea salt, and common salt, then rub this mixture into the beef.
After 4 days, add treacle and turn the beef daily in the pickle for a week or more.
Roll and boil
Remove the bones and skin from the beef, then roll it tightly and secure it with cloth and tape.
Boil the beef in cold water for 3.5 hours.
Press
Place the hot beef under a weight or in a press without removing the tape and cloth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef
- Forms the main body of the dish, and its fibres set firm as it cooks and is pressed.
- Saltpetre
- Helps preserve the meat and gives cured beef its characteristic pink colour.
- Coarse sea salt
- Draws moisture out of the meat and seasons it during the cure.
- Treacle
- Adds sweetness and a dark colour to the pickle and the cured surface.
The step that matters
Place the hot beef under a weight or in a press. Pressing the meat while it is still hot lets the cooked fibres and fat settle together as they cool, so the rolled joint holds a firm shape and slices cleanly.
Swap the parsley
How well each one fits the dish's main ingredients (beef, pepper):
- Rosemaryfits about as well
- Parsleythe original
- Marjoramfits about as well
- Celeryfits about as well
Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
