What each ingredient does

Beef tongue
The main meat that is transformed by curing and smoking over the weeks.
Saltpetre
Helps preserve the meat and gives it the characteristic pink cured colour.
Coarse sea salt
Draws out moisture and seasons the meat while helping to preserve it during curing.
Sugar
Balances the salt and adds mild sweetness to the cure.
Treacle
Adds sweetness, dark colour and moisture to the surface during pickling.
Juniper berries
Add a resinous, piney aroma that flavours the cured meat.

The step that matters

Rubbing in the saltpetre, sugar and pepper mixture thoroughly. Even coverage matters because curing salts only preserve and colour the meat where they reach the surface. Missed areas can spoil or cure unevenly during the long pickling period.
