What each ingredient does

Partridges
Provide the lean meat that is the main component of the dish, cooked by roasting.
Mushrooms
Add moisture and savoury flavour to the filling as they cook in butter.
Butter
Carries the mushrooms' flavour and adds richness and fat for moisture while cooking.

The step that matters

Let the mushrooms cool before stuffing. Warm filling loosens the mushrooms' juices and can make the stuffing soggy and hard to contain. Cooling it first keeps the filling moist but firm inside the birds.
