Why it works: Cucumber and vinegar are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 4,734 recipes. Both carry 2-methylbutyl acetate, which smells fruit. The science ↓

Dressed Cucumbers

Ingredients

Directions

Prepare the cucumbers

  1. Cut cucumbers into lengths of about 1 inch and remove the rind.

  2. Pare the cucumbers into thin ribbons until the watery part is reached and discard that part.

  3. Sprinkle the ribbons with cayenne and salt, and let them drain for a bit.

Dress and serve

  1. Arrange the drained cucumbers in a clean dish and drizzle with oil mixed with vinegar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the crisp, watery flesh that forms the body of the dish.
Oil
Adds richness and carries flavor across the cucumber surfaces.
Chili vinegar
Adds acidity and sharp heat that cut through the oil.
Coarse sea salt
Draws out moisture from the cucumber ribbons so they drain and season.

The step that matters

Paring to the watery part. Cucumbers are mostly water, and the inner watery core is soft and can make the dish soggy. Paring thin ribbons until that core is reached and discarding it keeps the remaining cucumber firm and crisp.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Cabbagefits better
  4. Cucumberthe original

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
