Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish chestnuts
Provide the main starchy body of the dish, becoming soft and tender when stewed.
Beef or veal gravy
Supplies the liquid and savory flavor that the chestnuts absorb as they stew.

The step that matters

Stew gently until tender but not broken. Chestnuts break down if the liquid boils hard. Gentle heat lets the starch soften evenly so the pieces hold their shape while becoming tender.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (chestnut, beef, pepper, butter, ham):

  1. Lemonthe original
  2. Figfits about as well
  3. Cherryfits less well
  4. Limefits less well

Fit is the average pairing score against chestnut, beef, pepper, butter, ham. Candidates are from the same food group and used in at least 100 recipes.
