What each ingredient does

Barberries
Supply the fruit and the tart flavor the jam is built around.
Sugar
Sweetens the jam and, as it thickens, helps it set into a spreadable texture.

The step that matters

Boiling the sugar and water until thick. Sugar syrup thickens as water evaporates and the concentration rises. Stopping too early leaves the jam runny, while cooking too long can darken and scorch the sugar, changing its flavor.
