What each ingredient does

Red cabbage
Forms the bulk of the dish and its crisp, shreddable texture that softens during pickling.
Coarse sea salt
Draws water out of the cabbage, concentrating flavor and helping it stay crisp.
Cold vinegar
Adds acidity that preserves the cabbage and sharpens its flavor, and shifts its color toward pink.
Black pepper
Adds a warm, aromatic spice that flavors the pickling liquid.

The step that matters

Pressing out the moisture after salting. Any water left in the cabbage dilutes the vinegar and weakens the pickle, so it should be pressed or shaken out thoroughly before packing into jars.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Capsicumfits better
  2. Mustardfits about as well
  3. Cabbagethe original
  4. Cucumberfits less well

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
