Why it works: Almond and spinach match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 352 recipes. Both carry nonanal, which smells fat, citrus. The science ↓

Almond Shamrocks

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the icing

  1. Whisk the egg whites until frothy and stiff.

  2. Gradually add fine dry sugar until the mixture is thick enough to work with your fingers.

Shape and bake

  1. Roll each blanched almond in a small portion of the icing until evenly coated.

  2. Arrange three coated almonds on sheets of thick writing paper in the shape of a shamrock, using a small piece of sugar for the stalk.

  3. Place the shamrocks in a very slow oven at 300°F (150°C) for 20 minutes or until firm without coloring.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whisked into foam, they give the icing body and hold it together as it sets.
Fine dry sugar
Stiffens the whipped whites into a workable icing and sets firm and crisp in the oven.
Jordan almonds
Form the core of each shamrock, giving the sweet a crunchy, nutty bite.

The step that matters

Baking at a very low heat without coloring. Sugar browns quickly at higher heat. A very slow oven dries the icing until firm while keeping it pale, so the shamrocks set without caramelizing.

Swap the spinach

The recipe marks spinach as optional. How well each one fits the dish's main ingredients (egg, sugar, almond, rose):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits about as well
  4. Spinachthe original

Fit is the average pairing score against egg, sugar, almond, rose. Candidates are from the same food group and used in at least 100 recipes.
